West African Groundnut Stew

Serves 8

In a large heavy kettle, heat oil and brown meat. While browning, add spices.

When meat is browned, add next ingredients to kettle. Simmer until meat is tender, about 30 minutes.

Combine and heat oil and peanut butter until hot and smooth. Add mixture slowly to stew and simmer over low heat 20 minutes.

Cook rice while stew simmers after the addition of peanut butter. Serve stew over rice.

Options: To use leftover cooked meat, begin by sautéing onion and garlic, then add meat with tomato paste and water.
