Peanut Chicken

Serves 4

Saute onion and garlic in oil. Brown chicken thighs in the oil and add the tomatoes. Turn down the heat, cover and saute for 20 minutes. Remove the chicken. Skim the fat, if necessary.

Add seasoning and peanut butter and stir well to make gravy.

Serve chicken with the gravy over rice.
