Puree beets with liquid. If you do not have blender or food processor you can buy shoestring cut beets and chop them fine, adding back into liquid. Add broth; or mix bullion cube with warm water to fill beet can and add to beets.
Grate ½ of onion and add to soup with lemon juice & salt and pepper to taste. Add sprinkle of dried dill, or some chopped fresh dill.
Chill and serve, garnished with dollop of sour cream.
