Italian Rice Soup
Serves 4
Boil for 15 - 20 min., until rice is cooked but not too soft.
- 1 c. washed rice
- 5-6 c. chicken or beef stock
Beat together
Pour cheese mixture into warm tureen and gradually pour over it boiling rice soup, stirring.
- 2 egg yolks
- juice of ½ lemon (2 Tbs. frozen juice is fine, don’t use RealLemon!)
- 3/8 c. grated parmesan cheese
- 2 Tbs. water
